Banana Brulee-Topped Chocolate Oatmeal

There's a little craze that is sweeping the vegan blog world called Banana Brulee. Started by Katie at Chocolate Covered Katie, she discovered that by microwaving a banana, you can create a warm, gooey, sweet, caramelized banana that is a perfect topping for, well, just about anything... but oatmeal seems to be the theme. I couldn't resist jumping on the bandwagon!

Banana Brulee-Topped Chocolate Oatmeal
  • 1/4 cup steel cut oats
  • 3/4 vanilla soy milk or water
  • dark chocolate to taste
  • banana
- Bring your soy milk to a boil in a sauce pan and add the steel cut oats. Stirring occasionally, let cook for at least 20 minutes. If it starts to get too sticky, add some water to make it creamier.
- A few minutes before your oats are finished cooking, add your chocolate to taste. I used about 10 small chips of melting chocolate.
- In a separate dish, chop your banana. Put it in the microwave for about a minute and a half, until the banana start to melt a little.
- Top your chocolate oatmeal with your banana brulee and eat!
