QUESAPIZZA!


Behold my newest creation! The Quesapizza!!! This was possibly my favorite dinner that I've had in a long time. You guys. Seriously. You have to try this. I was craving a quesadilla/Mexican-y dish, but my spinach tortillas were so huge that I decided to make a pizza. But then I thought...why not fold it into a quesadilla like I wanted originally? Genius!


Ingredients:
  • 1 soft Tortilla/Wrap shell
  • 1/2 cup vegetarian refried beans
  • 1 portobella mushroom cap
  • 1 tsp olive oil
  • 1/4 avocado
  • vegan mozzarella cheese, grated (as much as you want!)
  • garlic salt to taste
- Chop up your portabella mushroom cap. In a small pan, saute in a little bit of olive oil until soft and brown.
- Place your tortilla on a cookie sheet. Spread your refried beans over your tortilla shell.
- Slice your avocado and place the slices around your tortilla.
- Spread your mushrooms around the tortilla.
- Grate your vegan cheese over the tortilla.
- Sprinkle with garlic salt.
- Put under the oven broiler just until the cheese begins to bubble and melt, about a minute. Keep on eye on it so your tortilla shell doesn't burn!
- Let cool for a few moments, then fold in half. Enjoy!

* You can add whatever quesapizza ingredients your little heart desires: salsa, veg sausage, olives, roasted veggies, etc. Make sure that any cool ingredients such as lettuce or tofu sour cream are added after the broiler.*

ugh hungryyyyy! i made vegetable + corn chowder last night for dinner and am having more in a bit, but now all i want is this pizza! off to drool...

Ive been making things like this lately too! Fast, easy, vegan, good...and you get that tex mex spicy thang goin' which is always great for me at least :)
