Recipe Review: Oatmeal Cookie Crepe Cakes

I decided to stray from my standard oatmeal breakfast and jazz it up by making Oatmeal Cookie Crepe Cakes from Chocolate-Covered Katie. I added cinnamon and raisins and topped the pancakes with maple syrup. They were definitely delicious and a fun change to my morning meal! I LOVE pancakes but try to refrain from eating them because it usually leads to calorie overload - this small batch only made two pancakes and it was nice to know that I was eating a healthier alternative! They could have used a little more sweetener for my taste, but isn't that always my complaint?! I recommend! Try them!

p.s. Hubby who is the ice cream conisseur said that the Tempt is amazing. WAYYYY better than convential ice cream, even high end ice cream like green & black's organic, etc. So, high praise on the tempt!

When I saw this post, I was inspired to try out Katie's recipe too! I modified it a little but it WAS good! Very! And the vanilla and almond extracts made it seem like I WAS eating a cookie! Yummy! Thanks Andria, for making me aware of this recipe! :)
