Love Me, Love Me, Say That You Love Me

Unlike The Cardigans circa 1996, I didn't have to beg for any love this Valentine's Day. I got plenty of kisses and red hearts from my fam, my friends, and my delicious dinner (especially you, Mr. Red Velvet Cake). As I mentioned on Saturday, I planned a lovely dinner party with a couple of my girlfriends.


On Saturday I pre-made my Red Velvet Cake. I didn't use enough food coloring, as you can see here, but it turned out to be a really lovely Pink Velvet Cake - which was fine by me!

The Best Freaking Sandwiches Ever ready and waiting to rock under the broiler. Besides these masterpieces we also had quinoa with chickpeas and veggies.


And of course...my Over-the-Top Valentine Pink Velvet Cake. I used the recipe from The Vegan Table, as well as the suggested recipe for the Buttercream Frosting. Actually I tried the Cream Cheese Frosting recipe from The Joy of Vegan Baking first, but I have to say...there are a lot of substitutions vegans make really well, but cream cheese isn't one of them. At least not to my experience. So I nixed that and whipped up a batch of the buttercream.


Oh friend you've left me speechless.

My husband made us a chocolate cake to share! He makes the best chocolate cakes! He uses the fantastic recipe from the cookbook "How It All Vegan". I need to do a review on that book because it saved my vegan life during that first transitional year! Woo Hoo! :)

They're actually not candy hearts, they are paper hearts on toothpicks. They served a double purpose - decoration and holding up the foil overnight!

That cake looks delicious! I need to try those sandwiches, too...though I'll probably sub eggplant for mushrooms since they're the only veggie I don't like haha. Sounds like you had a great night! I just added you to my blogroll :)

It's beautiful! I think I like the pink better anyways! I have to disagree with you on the cream cheese frosting...that recipe from JOVB is one of my family's favorites!

Oh really?! What kind of cream cheese do you use? Maybe I haven't really given it a chance - I don't buy it on a regular basis and rarely ever use it so maybe some brands are better than others.

You know, it's funny that you say that about vegan cream cheese - because I *hate* vegan cream cheese on its own, but LOVE it in frosting! I think Tofutti cream cheese tastes JUST like dairy cream cheese once it's mixed with Earth Balance, sugar, and vanilla. I love vegan cream cheese frosting.

But anyway - that cake looks delicious! I'll take one of those sandwiches, too, please.

My favorite Valentine's "treat" was the new Aveda facemask that my boyfriend gave to me. And my favorite edible treat were the Chocolate Chocolate Chip Pancakes with Raspberry Syrup that we had for breakfast!

What a fabulous feast! I love the hue of your pink velvet cake--so cute and hey, sometimes it's a pain trying to get the cake to be red enough anyway. It's so pretty with the paper hearts, too.

Hmm, my favorite treat would have to be chocolate-related. :)

Wow that cake looks amazing! I've used Tofutti cream cheese in the past had great results. Don't give up on it yet!
