Zucchini Pasta

I loved your hysterical childhood paranoias from yesterday's post! From being swarmed by grapes to falling in rain gutters to being attacked by dead pet fish - so funny! And you guys had some amazing ideas for Spirapple additions: maple syrup, brown sugar, toasted almonds, nut butter, lemon juice, flaked coconut, flax, spices...I'm drooling on my laptop. Please share your own of either if you want to join in!

It seems like an overwhelming number of you are dying to get your hands on some zucchini noodles! So I went ahead and spiralized a couple of them today to give you a review.


The zucchinis were so easy to work with in the spiralizer, it took only about a full minute to get both of them done. I can definitely understand why they are so popular in the raw world! They are super easy, fast, and fun. And while you obviously don't need to core a zucchini, I loved that this happened:

You can just chop it up and throw it in your recipe. Or, you know...swordfight.

So while my intention was to make a raw dish a la my shaved-makeshift-zucchini-noodles on my raw day in November, I was running late after yoga and had minimal time. Plus, one of my favorite simple veggie dishes is sauteed zucchini slices, so I decided to just sautee the zucchini noodles!

I threw in a little olive oil, garlic, salt, and a chopped up Boca burger and voila. A yummy, filling, simple, healthy lunch! I would TOTALLY eat this again. I think there is something special about shoveling endlessly long pieces of delicious spaghetti in your mouth and I was so pleasantly surprised that zucchini noodles have that same yummy nostalgia. I will definitely try these raw too at some point, but they are JUST as good cooked!

Those zucchini noodles look divine! I have always wanted to try raw pasta but without a spiralizer, it's obviously a little harder!

I like making a batch of vegan oatmeal spice muffins for an 'on-the-go' snack. I also sometimes make a huge vegan lasagna at the start of the week and then portion it out in my fridge so I can just grab and re-heat if I don't feel like cooking. It's such a good meal with a side salad and it takes minimal effort.

Hummus, though, will always be my go-to buddy for a snack... it's perfect and delicious and spreadable!!! ;-)

The noodles look great! I have used a potato peeler to get flat zucchini noodles. A favorite quick lunch is to smear a brown rice wrap with hummus, a little nutritional yeast, and then add raw zucchini noodles, thyme, basil, salt & pepper. Flip in half and grill like a quesadilla until a little crispy. The zucchini is still raw - but the outside is warm and crunchy!

chickpea salad...or avocado on toasted organic spelt bread...or just a simple green salad with avocado with a sunshine burger!!!! and hummus with veggies or a toasted ezekiel wrap...yummo!!!

My go to snack is either carrots and hummus or a banana and nut butter with cinnamon. So easy and so delicious!

My favorite quick snacks have to be a banana or raisins or nuts. That sounds kind of boring written down. But it works for me! For a sit down meal: a salad and a baked potato with some Braggs Aminos and a favorite oil is also pretty simple to throw together! Given you've got an hour to let your taters cook! At least you can toss them in the oven and they doesn't need to be baby'd, leaving you free to get other things done. :)

For me, it's edamame! It's filling, inexpensive, yummy, and lightning-fast to make if I'm on the run. I love it.

The sauteed zucchini looks delicious! I like the Boca burger addition; I add 'em to stir fries and fried rice--it makes the dish that much heartier, and it's so quick and easy!

For a quick snack, I like eating pear or apple slices with a bit of crunchy almond butter. For something super-quick, I usually go for nuts or homemade granola.

My favorite quick, easy snacks come straight from the freezer!

Fast snacks are generally nuts, dried prunes (apparently I'm an 80yr old at heart), larabars and home baked things.

Well now I have some raw tomato based dip (tomatoes and other veggies out of the food processor) with carrots. So good. Or Mary's crackers with homemade hummus.

My favorite quick snacks are mashed avocado on millet bread, or a handful of almonds! Those zucchini noodles look awesome!

As many times as I've made makeshift zuke noodles with my veggie peeler, I've never tried cooking them. I bet that's fabulous! I love sauteed zucchini, so...

As for fave healthy snacks, I plain old carrot chips (just raw carrot slices) and salsa. Also I've got a thing right now for brown rice cakes with hummus, alfalfa sprouts, and sriracha.

Sweet, I love zucchini pasta! What else could you turn into noodles? Parnips? Cucumbers for some sort of summer salad?

Fast snacks are definitely granola bars and apples. I've eaten one or both pretty much everyday for probably the last five years. What they say about apples is true. Apple a day=No doctor visits!

i'm glad to hear the zucch noodles are good cooked! They look awesome too. My fast snack is trail mix by far and then fruit..simple:)

haha I love that sword! Some of my quick go to side dishes are frozen veggies microwaved with a quick soy milk/ nooch sauce, or tomato sauce, crackers or toast with hummus or whatever spread happens to be in my fridge, and of course salads, but I usually like something heartier with dinner.

This does look so easy to whip up! One of my quick go-to meals would be a version of cavatelli & broccoli with some white beans, garlic, and olive oil. Easy & Delicious!
